A Taste of Our Past

The original Gumbo's opened in May 1994 at 14735 Bratton Lane, Suite #310. It was located in a strip mall that, at the time, was in a rural area of North Austin. The husband and wife team of Michael and Yoli Amr are the creators and founders of Gumbo's. Originally from outside of Baton Rouge, Michael created all of the recipes seen even on today's menu. While Michael ran the kitchen of the original Gumbo's, Yoli ran the front of the house, greeting every guest that came through the door.

Mike and Yoli, with the help of friends, did everything from remodeling to cleaning to open the first Gumbo's. They showed their appreciation to the friends who helped by naming some of the menu items in their name. For example, Crawfish Eddy is named after Ed Crowley who repaired faulty equipment and phone lines.

After several years of great success, Mike and Yoli decided to move the restaurant to Round Rock, Texas. Serving dinner only, they changed both the menu and atmosphere to create an up-scale feel. After only two and a half weeks for renovations, Gumbo's Round Rock re-opened in November 1998. Because of Mike and Yoli's commitment and dedication to quality food and service, they were successful in their new location as well. With the years of support and hard work from employees like David Gore, William Lundgren and Clemente Cabrera, they were able to continue their success and maintain the loyal customer base they worked so hard to achieve.

In May of 1999, Fired Up, Inc. acquired Gumbo's - A Louisiana Style Café from St. Gumbeaux, Inc. As part of the agreement, Fired Up, Inc. bought the original Gumbo's restaurant in Round Rock, Texas and opened up the second location in the historic Brown Building in downtown Austin. A third location was opened in Dallas in October 2001 and a fourth in Denver, January 2002.

In June of 2003, St. Gumbeaux, Inc. acquired Gumbo's and the Brown Bar. Owners, Mike Quigley and Michael and Yoli Amr continued to provide the public with an establishment that was fun like a "mom and pop" operation. The entire staff was committed to excellence and provided a clean, welcoming atmosphere. As a team, they strived to provide guests with a high quality product that was consistent, prepared to order, and an exceptional value.

In April of 2005, Shuler and Denise Page purchased the Round Rock location under a licensing agreement from St. Gumbeaux, Inc. The concept remains the same including the food, recipes, and great service that have continued to make this restaurant successful.

The concept is positioned in fast-growing segment of the casual dining market and includes many features distinguishing Gumbo's from the competitors. While offering an authentic and distinctive dining experience, Gumbo's showcases some of the greatest flavor to come out of any French inspired Cajun kitchen. The full menu is innovative and diverse, offering quality food, generous portions and value pricing.

The success of Gumbo's now and in the future is determined by the hard work and dedication of the owners, managers, and entire staff. We want every "guest" that walks through our front door to feel welcomed as if they are in our own home. We firmly believe in word of mouth advertising, accomplished through learning our guests' names, providing quality service, exceptional execution, superior food, and the dedication of our staff. As employees of Gumbo's we strive to exceed guest expectations and provide them with "Lagniappe", a Cajun term meaning "a little something extra."
